Pear Banana Nut Baked Oats

Cook time: 35 minutes

Servings: 4

Ingredients:

  • 1 or 2 bananas, sliced

  • 1 pear, chopped

  • 1 tsp cinnamon, divided

  • 1/3 cup maple syrup, divided

  • 1 1/4 cup One Degree Organic rolled oats

  • 1/3 cup chopped pecans or other nut

  • 1/2 tsp baking powder

  • 1/4 tsp salt

  • 1/2 tsp apple pie spice (or sub cinnamon)

  • 1 1/4 cup milk of choice

  • 1 flax egg or regular egg

  • 1 tsp vanilla

Directions:

  1. Preheat oven to 350°F. Spray an 8x8-inch pan with non-stick spray.

  2. Cover bottom of pan with fruit. Sprinkle with 1/2 tsp cinnamon and drizzle on 2 TB of the maple syrup.

  3. Bake for 15 minutes.

  4. In a medium bowl, combine oats, nuts, baking powder, salt, 1/2 tsp cinnamon, and apple pie spice. Pour over baked fruit in pan.

  5. In the same bowl, combine milk, flax egg or regular egg, the rest of the maple syrup (1/4 cup). and vanilla extract. Pour evenly over oats.

  6. Bake for 30-35 minutes.

  7. Top with nut butter or fruit or whatever floats your boat!
