Chocolate Almond Butter Granola
2.5 cups rolled oats
1/2 cup raw walnuts
1/2 cup coconut flakes
2 TB cocoa oatmeal spice blend (can sub cocoa or cacao)
2 TB ground flaxseed
2 TB coconut sugar
1 TB cinnamon
scant 1/2 tsp pink salt
3 TB coconut oil
1/4 cup maple syrup
1/4 cup raw unsalted almond butter
splash vanilla extract
Preheat oven to 350°F.
Mix dry ingredients (oats through salt) in a large bowl.'
In a small saucepan on low heat, melt coconut oil. Stir in maple syrup, almond butter, and vanilla extract.
Pour wet ingredients into dry and mix until well-coated.
Transfer to a baking sheet and press into a flat layer. Bake for 25-28 minutes or until edges get more golden brown.
Break up granola into rough large chunks and let cool completely (it gets crunchy when it cools!)
Enjoy by the handful, with milk, in yogurt bowls, or on top of pancakes for a little extra crunchy goodness!
