Chicken Caprese zoodle Bowl

I'm going to call this a bowl, but actually I served it on plates...Shhhh...

Fun Fact: The balsamic glaze I used to top the dish is actually from our trip to Italy a couple of summers ago! It is divine! I forgot we had it, but it's as good as ever, and was the perfect topper to this summery meal!

Serves 2


  • 2 Chicken breasts
  • 2 medium zucchinis
  • 1 cup cherry tomatoes, halved
  • 1/2 c fresh mini mozzarella balls, halved (or chop a big mozzarella ball into little chunks)
  • 1/2 c chopped basil (separated) ...or more...because....basil :)
  • 3-4 tablespoons olive oil (separated)
  • 2 tablespoons balsamic glaze or vinegar (for dressing)
  • Sea salt + pepper


  1. Spiralize 2 large zucchinis.
  2. Chop tomatoes, mozzarella, and basil.
  3. In a large skillet heat 2 tbsp olive oil. Cook chicken until light brown and cooked through.
  4. In a bowl combine zoodles, cherry tomatoes, mozzarella balls, ½ of the basil, 1-2 TB olive oil, salt and pepper. Toss until everything is thoroughly coated with olive oil.
  5. Plate (or bowl) the zoodles and top with the cooked chicken.
  6. Drizzle balsamic glaze on top, and sprinkle basil.
  7. Enjoy this refreshing summery meal!
