Blueberry Lemon Overnight oats (dairy-free, low-fodmap)
- Heaping 1/3 cup rolled oats
- 1/2 cup unsweetened vanilla almond milk
- 1 TB chia seeds
- Juice of 1/2 juicy lemon
- Lemon zest (about 1/4-1/2 tsp?)
- Splash vanilla extract
- 5 vanilla creme stevia drops
- 1/3 cup fresh blueberries
- 1-2 scoops collagen peptides (Vital Proteins)
- Toppings: Coconut cult probiotic coconut yogurt, almond/peanut butter, fruit, nuts, etc.
- In a bowl, combine all ingredients. Top with a lid or cover with foil. Stick in the fridge overnight.
- In the morning, top with coconut yogurt, almond butter, more blueberries or strawberries, or walnuts! (Anything you'd like really!)
