Blueberry Lemon Overnight oats (dairy-free, low-fodmap)



  • Heaping 1/3 cup rolled oats
  • 1/2 cup unsweetened vanilla almond milk
  • 1 TB chia seeds
  • Juice of 1/2 juicy lemon
  • Lemon zest (about 1/4-1/2 tsp?)
  • Splash vanilla extract
  • 5 vanilla creme stevia drops
  • 1/3 cup fresh blueberries
  • 1-2 scoops collagen peptides (Vital Proteins)
  • Toppings: Coconut cult probiotic coconut yogurt, almond/peanut butter, fruit, nuts, etc.


  1. In a bowl, combine all ingredients. Top with a lid or cover with foil. Stick in the fridge overnight.
  2. In the morning, top with coconut yogurt, almond butter, more blueberries or strawberries, or walnuts! (Anything you'd like really!)
